I ordered mine as soon as I saw it. Can't wait for it to get here! One
recipe I found while doing some research suggested using an aebelskiver
(yeah, I know, that's probably not spelled correctly) pan to make the same
batter into frittery things. That sounds interesting, as well.

Subject: [Sca-cooks] The Pan for Hong Kong Waffles Found
Years ago Mistress Huette saw an article on Hong Kong waffles and
decided she wanted one of the special pans for making them. We
discussed it on the list back in April 2008. No luck ever finding one.
Many attempts were made. I even looked and struck out when I was in
Shanghai in 2009. (Wrong area of China, I was told.)
Tonight I opened up the new Williams- Sonoma catalog and there was the
pan!
Nordic Ware Egg Waffle Pan $49.95
A Hong Kong favorite for generations, the puffy, doughy treats called
"egg waffles" are traditionally cooked by sidewalk vendors and enjoyed
for breakfast and snacks. Now you can make the waffles at home using
this pan from Nordic Ware, a family-owned company famous for its fine
bakeware since 1946. Creates egg-shaped waffles with crispy-golden
outsides and tender-creamy centers. Durable cast-aluminum distributes
heat quickly so the waffles cook evenly. Nonstick coated interior for
flawless release and convenient cleanup. Rugged stainless-steel
handles. Hinged, interlocking pans separate for easy washing. Recipe
included. A Williams-Sonoma exclusive.
So just in time for Chinese New Year, your very own gai daan tsai pan.
