Have you looked into any of the Amish recipe books for the German? They haven't changed much over the years. Let me dig out the ones I have and send them to you.

Ok all, I am in search of recipes for cheeses, from 1400's up through our time 
periods.  Mostly Dutch, German, Finnish, Polish and so forth.  

 
I have some, but if you all could point me to other recipes you may have singled 
out, I would greatly appriciate it.
 
I have looked through the Florigium and gotten the links to the Dutch cook books 
there, and Forme of Cury, and a few German ones.
