I did have that thought too, and have looked for some, I have found some really 
cool things like an 1800's cheese press board that is carved like a springerle, 
but not too many recipes that have specifically cheese making recipes.  Lots 
that use cheese but not make it.  So yes, please if you have recipes for that 
too, That would be great!

Have you looked into any of the Amish recipe books for the German? They haven't 
changed much over the years. Let me dig out the ones I have and send them to 
you.

Ok all, I am in search of recipes for cheeses, from 1400's up through our time 
periods.  Mostly Dutch, German, Finnish, Polish and so forth.  

 
I have some, but if you all could point me to other recipes you may have singled 

out, I would greatly appriciate it.
 
I have looked through the Florigium and gotten the links to the Dutch cook books 

there, and Forme of Cury, and a few German ones.
