[Sca-cooks] eels again

Looking at this, he's preparing American freshwater eel (Anguilla rostrata). 
You'll need to get it through a dealer on the East Coast as it is an 
Atlantic fish.  It is similar to A. anguilla, the European freshwater eel. 
The two species differ in number of vertebrae and chromosome count.

In Oklahoma, I would try a specialty fishmonger (we have one or two) to see 
if they could get it.
