I'm sure there were exceptions, but it seems as if too many cultures were doing an awful lot of frying right before Lent begins (see references to Shrove Tuesday pancakes, Fat Tuesday, etc.); it would make some circumstantial sense to think it's because there was less of it going on for a while after... of course, this may not have been exclusively the case in the Middle Ages, but it would make some sense. Let's say it makes even more sense then than it does now.
