Places recommended by Anthony Bourdain:

Marche International de Rungis (1 rue de la Tour, 94152, Rungis, Paris)

The central butcher's market for the whole city (you have to wear a
tissue-paper jacket).  There, you'll see your food, not just
in its natural state, but also what is in season (which may govern your
shopping and eating).

La Tete Dans Les Olives (2 Rue Sainte Marthe, 75010 Paris, France)

apparently, both a restaurant (with a huge waiting list) and a specialty
shop, specializing in olives and little noshy, homemade things.

Je The...me (4 Rue d'Alleray 75015)

a restaurant specializing in offal

Rue Mouffetard:  home to an open-air market, and restaurants, shops and
cafes.  Tony went to Les Papillons.

Hugo Desnoyer Bucherie (45 Rue Boulard, 75014)

A butcher shop and charcuterie; they make their own sausage, too.
 Old-school.
