A maguffin is an item that all the action revolves around.  A bag of magic 
groats sounds good.  What's it do for yah?

Cow?  Nah.  First you steal a horse...

With a horse, you catch the cow (property of the sheriff), sell the horse to 
a Rom at a cut rate to fund the operation, then you're off.  Except Sir 
Boris Badinoff has swiped your bag of groats replacing it with crushed 
acorns while Lord Pettyfog and his merciless cut-throats are out to make you 
tell them where you hid the groats, so you set up Lord Pettyfog for stealing 
the horse, und so weiter.
