[Sca-cooks] Good referrence for St George and the Dragon

So there is this fantastic video of the Hampton Court kitchens and they show St. George and the Dragon (I believe) in marzipan (again, I think).  What books would you all suggest I look at in order to document this?  I have an idea, but any and all book and website likes would be welcome.  I have to cross check a few books I have right now as I haven't read them in a very long while.
