The eggs on a gridiron are from Martino (et. al.) it is the recipe right after or right before eggs on a spit. 
You make an egg pancake in a frying pan and you place that on the grid iron. 
Then you break eggs onto it and place coals above and below (I am assuming above is with a shallow pot or frying pan turned upside down). The cooked eggs are sprinkled with sugar and cinnamon. 

It was GRATE and GREAT fun. 

The bars on the grate MUST be fairly close together in order for the pancake to not fall between the cracks. The first two attempt was a gridiron with bars spaced too far apart. The first try was a laugh and a half. The second try we got one egg cooked perfectly BUT it was really difficult to get it off the grill. Our third try was FANTASTIC (but the camera was out of battery! Three PERFECT eggs.
