I don't care for horseradish most of the time, so I'd use the smaller amount, but it's probably largely a "to taste" thing.

I would have read it as equal amounts of the  3, say 1 cup shredded granny smith, 1 cup fuji and 1 c zucchini  (or 1 granny apple, 1 fuji & 1 zucchini of similar size, or 1 lb of each etc)

but would I want 1/4 cup of horseradish  (1 fourth of the amount of each) or or 3/4 cup (1 fourth of the total amount of each) probably the 1/4 cup, but...
