Rumpolt has a number of kidney recipes, including ravioli stuffed 
with kidney, pavis (little fried open face sandwiches with a kidney 
filling, and a Kidney roast (the part of the meat where the kidneys 
are, it may include the kidneys) wrapped in rye dough, and veal meat 
rolls stuffed with kidney.  But not sausages.
