Rumpolt has one too, in the middle of the Confect chapter between
dates boiled in sugar, and gooseberries in syrup. This is also for
very early walnuts, that have not developed a shell yet.
Confect 10. Take nuts/ that are not ripe/ with the shells/ that are
soaked for three weeks/ set on (the fire) in water/ and let simmer/
until they become a little soft/ in clear sugar/ and let simmer very
slowly/ take out into a dish/ and let become cool/ and pour not much
syrup over it/ then they are just sweet.
