Yeah, we made a big push to change the culture to one where you book, 
you pay ahead, and you tell the steward if you have any dietary issues-- 
and bookings typically close a week or more before the event.

(Upshot-- I never worry about catering for *any* food issue unless it 
relates to a specific person who I know will be attending.)
