Since my previous post, I did more poking about in the Florilegium and found the entries on "Alows of beef." 

It's 15th century, but at least it does show that beef rolls were part of the French cooking tradition.

Makes me think that a really elaborate beef roll could have been on a king's feast table even earlier.
