[Sca-cooks] 9 percent vinegar

These higher acidity vinegars are used today in pickling as well as cleaning. In pickling you consume the pickled food, not the preserving liquid.

Pickling in the medieval period is an interest of mine. I need to look the subject up in the Florilegium.
