My obligatory Rumpolt comment, is that Ein New Kochbuch has recipes 
for Marmot, seal, beaver, porcupine, guinea pig (which can be up to 
four pounds!), wild and domestic hedgehog, hare, rabbit, coney 
(Caninichen), and squirrel.   (But no dormice).
