Not uninteresting, but rather simplistic given  the sweep of the subject. 
The idea that beef and lamb replaced pork as the  favored meat is not a new 
one, though the shift begins to appear before the  Plague in fact. The 
article also seems to focus very much on the late Middle  Ages. Finally, it's hard 
to tell from the summary, but I get the  impression it's based on textual 
evidence, which is only part of the  picture.

For anyone who wants a broad archeological view going across  more of the 
period, this is a particularly good article:
