[Sca-cooks] Eryngo Roots Equal Cilantro?

Based on the information in the link below, I might use another member of
the carrot family -- perhaps parsnip?  I see that the period recipe says to
cook the eryngo root the same as parsnip, so they're probably somewhat
similar.
