[Sca-cooks] Note to "spices hide the taste of bad food"

I've eaten porcupine in Cameroon. Nothing particularly striking about  it.
 
My theory is that most unfamiliar meats taste like chicken (porcupine),  
veal (gazelle) or squid (crocodile tail). I'm sure some taste like beef as 
well,  though more or less tough or rank. There are gradations - boa tastes 
like squid  on the outside, but strangely granular (like marrow) on the inside. 
But one can  get a long way by triangulating between those basic 
textures/flavors.
