'Douce' would cover any mixture that does not involve any of the
'hot' spices, and 'Forte' would cover any mixture that involved
any significant quantity of any of the 'hot' spices.

  There is an alternate reading which would include lots of sugar
  in any 'Douce' powder.  See for example the recipe for 'Douce'
  within the recipe for 'Hippocras' in Menagier.

'Hot' spices would include pepper (black, white, or long), ginger;
possibly grains of paradise, galingale, cloves, perhaps others.


A number of sample compositions for these mixtures are available
in books and online.  There's no one 'right' answer.
