[Sca-cooks] Homemade Almond Milk

The first time I saw store bought almond milk was in the states and somehow it turned me off. It didn’t taste like the homemade almond milk I make. I don’t know what it had in it to change the flavor.

Personally, if one has problems such as Stefan, I would promote making it from scratch. All it takes water, a chicken bouillon cube (better yet real chicken broth) and peeled and scalded almonds (measurements may vary 4 to 1 or 2 to 1). Put them in a food processor, grind well and pour it through a fine strainer and its done. At least that way you know sort of know what you will imbibe.

Others may scoff and say milk is better for you, but in my case since I'm on kidney dialysis, milk products are something I'm supposed to minimize. They contain potassium and phosphorous, which the dialysis has problems removing from my blood.

It is difficult for me to dissect the advantages and disadvantages of food products but googling it I find almond milk over weighs cow’s milk in nutritional value even when made with water, not chicken broth. Yes cow’s milk is high on protein but that can be found in other food products.
