Along the same lines, but with more detail (and a little less snide), may I recommend Jennifer Lee's The Fortune Cookie Chronicle -- here's the writeup from the local library catalog:

Lee traverses the U.S., China, and beyond in her quest to discover what has made Chinese food ubiquitous in America. She investigates the murky origins of chop suey, which for decades peculiarly defined Chinese cooking for many Americans despite the fact that the dish appears nowhere in its putative homeland. I saw this web page and thought some of you might be interested. How many of these did you think actually originated in China?

I know that Master Adamantius' Chinese New Year menus gave me a much better idea of what "chinese" food was like but one or two of these I did get wrong.
