Muffett or Moffet wrote it prior to his death
in 1604, probably 1596-97.

Here are some notes from reading the chapter
from the EEBO service.

On Milk is chapter 14 begins on page 119.
This is actually weird to read--
It begins with a discussion of the substance
milk and says a lot about things sucking milk
except of course this is the 'long s' which means
that word that is printed is.... well you get
the picture... and if you don't well then
you don't need to know---
so we have breastfeeding, and wet nurses, he's
recommending it seems country women who live on
goats milk as being good wet-nurses based upon
the ancient Greek myths.

On page 121 he says that asses milk is best for
some, for others cows milk, and yet for others
goats milk. Mentions Pliny.

On page 122 there are 4 ways to know the best milk--
namely color, smell, consistence, and taste.
Section on milk to be drank in health.
section on which milk is best when sick. For
consumption, a disease of the lung, he recommends
cammels milk and then after that breast milk.
How to choose a good nurse (wet-nurse)
He talks about another sort of consumption that
is best cured by asses milk and what the ass should
be fed...
Likewise you should remember to rub and stroke your
dairy cow so that her milk will be sweeter.
Then he goes onto the next  chapter

Chapter 15 is on Butter Cream Cheese Curds and Whey
This section is more straightforward humorial theory
with mention made as to what is hot and moist. etc.
About butter, he writes:
It is best at breakfast, tolerable at the beginning
of dinner, but at supper no way good, because it
hindreth sleep, and sending up unpleasant vapours to
anoy the brain, according to the old Proverb, Butter
is Gold in the morning, Silver at noon, and Lead at night.
Then he starts in on cheeses, and curds and whey... except
he also mentions that whey is also mentioned in the
drinks section too.

This is pretty much what is given in the original paper
from the Oxford Conference.

Hope this helps. This is a very brief description. Actually
the book online is very readable and very interesting, much
mose so than most dietaries.
