Greetings! Ivan Day has a new blog today
(http://foodhistorjottings.blogspot.com/) about "Ryce Puddings in
Scoured Guts". The recipes are from the early 1600s, primarily Gervase
Markham, and Ivan liberally sprinkles the blog with photos of various
procedures, samples, and photos of period texts.
Someone recently, on some Internet group, was asking about funnels for
stuffing sausage casings. You can see one here and the careful procedure
for putting the guts onto the end of the funnel.
