Sounds like it was a neat event and you had a lot of fun!

You can see them spit roasting meat in the Bayeau Tapestry, I believe. So roughly the same time period and culture.

They might have saved the stewing for tougher, older animals. Or those that had been pickled or preserved in salt. We are after all talking about the upper class, not the peasants.
