Let's not forget that in period there was a big difference between a dish
and a course.  It was not unusual for an English feast to include ten to
twelve dishes in one course, but it was usual in the late Middle Ages to
have no more than three courses in a feast.  My understanding is that three
courses were enough for royalty, two courses were usual for nobility (at
least the lesser nobility), and one course for commons.
