As to what Cook's Science offers, today's email carried a mention of a paper on ingredients for a 5000 year old beer.

"Excitingly, researchers were recently able to determine the ingredients in a beer brewed in China 5,000 years ago. Their discoveries were reported in the journal of the Proceedings of the National Academy of Sciences. This ancient beer recipe included a variety of starches (broomcorn millet, barley, and Job’s tears) as well as tubers such as yam and snake gourd root. This research was made possible by the application of new methods for analyzing microscopic plant remains, including starch granules, recovered from pieces of brewing vessels."

"Revealing a 5,000-y-old beer recipe in China" is the name of the paper.
