Greetings! Has anyone else (besides Johnna?) found this website?
http://www.foodsofengland.co.uk/references.htm
This is their description: "The Foods of England website holds the
complete texts of dozens of cook books from that of the master-cooks of
King Richard II in the 14th Century right up to Mrs Beeton and Escoffier.
You can search all of them with one click..."
While they list many books, they specify which aren't online yet. A
potentially useful part of this website is being able to look up odd
bits and pieces: Really English? Timeline, Food Map of England and a
list of 26 categories of foods, including breads, dairy, egg dishes,
fruits and vegetables, meats and meat dishes, pastries and pies, and
much, much more. You can click on the specific items that are brought up
in each category. You will either get an explanation of the item, a
reference to where one source where it is found or a copy of the
original "receipt". Have fun browsing!
In the "English Service" introductory paragraph, the term "removes" is
tackled but it is not specified as to when it was introduced. The second
paragraph gives two dates for when it's described (1747, 1764).
Because there is so much on the website, there are, obviously, more
sources, recipes, etc., out of period than in. Be judicious and be wary!
