The December 2016- January 2017 issue of Woman's Day magazine has an interesting photo of gingerbread house cookies arranged around circular cake forms, creating a tall three or four house creation. I can see it being done as medieval houses leading up to a castle on the top. 
Instructions are on page 161 of the issue. It would be rather expensive to duplicate as shown. The cookie cutters are from coppergifts.com ; they run $36 for three.

and it calls for commercial styrofoam cake molds at $7.95-10.95 each. But one could create one's own cutters or use cardboard forms and carve your own foam.
