Interesting article. I've had spicy foods that didn't seem that spicy on the first bite, but after several it was way too hot. Since I've never cooked professionally or for large groups, it had never occurred to me, that single bite might not be a good sample.

I do shy away from very spicy things because I'd rather taste the spices and the other flavors and not just taste burning hot.
