On just a glance, The Oxford Handbook of Neolithic Europe, Plants in
Neolithic Britain and Beyond, Palaceware Across the Neo-Assyrian Imperial
Landscape (pg 78, interesting section on the heating values of different
fuels). I've got a number of other references, but they are scattered in
various papers on Neolithic sites.

I am not surprised that they used ruminant dung -- it has a fair bit of
undigested cellulose. Use of chaff, however -- that's new to me. Any
references?

Archeological evidence suggests that in some locales the chaff is used
as the fuel for cooking and for the Middle East, I expect that dried
dung was commonly used. The paper Johnna referenced is interesting, but
I need to give it more than a cursory examination.
