The illusion is, they appear to be meat rather than fish. Apparently, fish
sausages were not common (how many fish sausage do you find at the grocery?)
and they were seen in period as an illusion food served on a fish day. I've
been trying to locate a recipe for making fish appear to be venison. No
luck, so far.

What's the illusion?
I'd be surprised if there weren't any period fish sausage recipes. That
wouldn't really be that different from fish pies, would it?
