The question is more likely whether the casings were natural, collagen or 
cellulose.  I doubt that the medieval animal bowels were any tougher than 
the guts of a critter raised on mesquite, cactus and short prairie grass.

Casings are variable dependent on the type of animal, age of animal, etc.

Or maybe medieval critters had tougher bowels <grin>
