I've never ever tried to make sekanjabin but here's my guess: total volume after mixing together will probably be about 6-6.5 cups and the evaporation will be fairly low if you heat it gently just to dissolve the sugar, say below 2%. When brewing beer I get 8-10% evaporation during the one hour boil. I guess simmering too long will cause the sugar to precipitate when the syrup cools down to room temp but then again, I've never made a single batch of sekanjabin in my entire life.
