I'm sorry that I haven't been responding much. We've
been overwhelmed with assorted emails and such as
well as work being frantic.

The Pennsic blogsite is wonderful!

Let's see, open fire discussions...

Well, the A&S entry that basically sealed my Laurel
was all designed to be prepared in a camp environment.

Tell us how your spinning chickens went. I really
love how well they roast and the flavor is awesome
but have found that it takes too long over a campfire
to spin them. Have I done something wrong?

Anyone else try covering chicken with clay or a
salt/egg white misture and burying them in holes
with coals? You have to be careful with the soil.
One time it worked great and the other they barely
cooked. The first time was in richer soil and the
second in very sandy. If trying Peasant Chicken
in sandy soil, line with aluminum foil and build
a bigger fire in the hole. 

I'm looking forward to doing some Dutch Oven
cooking again, but I think it will be about a year
before I get to try.

So let me live vicariously through you guys.
