I seem to remember reading a book a few years back in which the Battle of
Hastings was described.  As I recall it, the Standard Bearer was a
particularly fierce fighter, and was either the last, or next to last,
Saxon standing in the midst of a ring of Norman foes.  In this case, he did
not get to do much fighting until the end, but the Standard Bearer was
considered to be an office of honor for great fighters.  Of course, at the
end of the battle, he did a lot of fighting, much of it with the standard
(with which I think he scored at least one kill).  In this context, it
might not be hard to find battle-hardened veterans to volunteer to carry
the standard, even if it means going without a shield.

If you really want to make people ache for the chance to be Standard
Bearer, hold a tournament in which the only allowed weapon styles involve
those skills neccessary for the job, such as sword in one hand and spear in
the other, or hand-axe and glaive.  The winner gets to be the Standard
Bearer.
