[Sca-cooks] Good basic cookin reference books

A title that is new but already I've pulled off the shelf a few times to consult is Michael Ruhlman's "Elements of Cooking: Translating the Chef's Craft for Every Kitchen."  It's only available in hardcover right now, but when a reference book is good enough that you read it cover to cover, it's worth the money.
