That's going to be a problem.  To the best of my knowledge, we don't  have 
ANY Northern European cookbooks from that early, much less ones that are  
specifically Welsh.  Which leaves you with the options of going with the  earliest 
English cookbook available, which is late 13th century (1200's), or  working 
with archaeological reports and similar information that can at least  tell you 
what butchered bones were found, possible indications of how things  were 
cooked, and what seeds or plants might have been used as seasonings or  veggies.
