Another version is one I got off Cariodoc's page.

1 cup water and 2 cups sugar and boil till dissolved.
add 1 cup of red wine vinager and reduce liquid to 1/2
add 1 handfull of chopped mint (those plastic packages from the grocery do 
well) and let sit.
