ANST - A&S Competitions & Food

I have been entering food in A&S competitions for a year now. I have a 
concern that I hope folks will take back to their groups and discuss 
before they hold their next A&S competition. 

Period recipes is a fun way to explore the middle ages. However, I don't 
think food poisoning - while certainly period - would be a welcome 
re-creation.  I have seen food in competition sit out for upwards of 4 
hours before juding.  This is unsafe.  

I would like to suggest that food entries be judged at the beginning of a 
competition or at some set time. This way the entrant can set the food 
out only a few minutes before the competition and be sure their display 
of the food is at its best (and safest) for the competition. The entrant 
can also clear away the food before it has been out too long and is 
unsafe.

As someone who enjoys exploring period recipes and introducing others to 
them, I want to enter foods and let others taste them. I also want to do 
it safely.

I hope y'all will think about this concern when running your next A&S 
competition.
