My introduction to crawfish and etoufee  (sp?) was when a group
from Louisiana cooked up some at one of the early Gulf
Wars and was serving it to those interested. I thought
it was wonderful.

Ansteorra often hosts a chili night at Pennsic. Perhaps
something similar should be considered for Gulf Wars.

Part of me would rather see period food, but another part finds
this chance to sample foods, even modern foods, from a different 
region interesting,
