The Vikings used drying (for meats and fish, especially), smoking (again,
meats and fish), and pickled meats and veggies in whey, where the lactic
acid tended to retard bacterial growth.  See my webpage in the "Viking Food"

Hello.

Does anybody have good references into period food preservation
techniques?  I've got a few, but everything before canning shows up as a
single chapter.

And yes, Stephan, I'll look in the Florilegium (sp?)  ;)

Also...I'd like Mistress Xene's email address, if anybody has it...if
anybody was using advanced preservation methods in period, it was
probably Byzantium....(they even heated their public baths using
petroleum!)
