I believe that both the issues of the tannins and oils have a lot to do with
what kinds you are looking at.  Different types of wood, different levels of
tennins (not to mention different types of tannins)  Oils going rancid has a
llot to do with how they are prepared and what they were made from.   "Oil"
is one of those words that is used in English to refer to a lot of different
(and mutually distinctive) materials.

I find that with wooden plates and bowls, the occasional wiping down with  a
plain veegetable based oil usually works.
