Depends on whether you're recounting the history of a nation or of the
inhabitants thereof specifically.  "American History" really refers to
the people of America, although it's widely used to mean, "any
historical discussion relating to the United States of America."  "Texas
History," on the other hand, manages to convey the same meaning for the
State of Texas without the use of the possessive case.

I think it really boils down to what rolls off the tongue most easily.
For me, it's usually peas.
