Here is my 25 cents worth on this subject(inflation!)

I like having people on one side of the table. This allows for easy serving
and also for incredible table decorating with front cloths. Also everyone is
facing the same direction. A problem you will run into in expecting around
500 people or so is that the current number of tables at the Sokol hall will
not be enough. 
I am using 2 tables put together and with a person sitting on each end for a
total of 10 people. You can expand by another table to make it 14 people,
but I think 10 is the best and most groups will not be any bigger than 10.
With 500 people you would at least need 100 tables, plus tables for gate,
feast setup, landed, entourage, and any displays. The extra 35 tables
probably wouldn't be to expensive and everyone could sit in comfort. Sokol
hall already has 80 tables.

On table reservations. Let people know that you are only having 10 people
per connected tables setting. Also the reservations is a great big hassle.
Just let the people who really want to get to the site early get the best
tables. Just guarantee's who ever prepays a seat at a table for feast.
