RE: ES - Pigs (was Heal Thyself first)The best recipe I heard for javelina
came from an old highway patrolman
in Arizona.  It is as follows:

Dig a big pit.
Fill the pit with mesquite and fire it up until you get a good
    bed of coals.
Season the javalina and wrap it in heavy aluminum foil.
Wrap the aluminum foiled javalina in wet burlap and throw
   it into the pit.
Cover the pit with dirt.
After 6 hours dig up the javelina and remove the burlap
   and the aluminum foil
Discard the javalina
Eat the charcoal.
