Having killed upward of 100 Javalena I can tell you that in my not so humble
opinion
they do not taste all that good.  However, the young suckling pigs and the
younger
adults have a pretty tasty ham that if properly treated, i.e. Killed quickly
and bled
throughly is as good as any pork.
