Shellac is more period than polyurethane and yellows and cracks over time.
Modern antique crackle finishes try to imitate this.  For historical
references check Cellini's del'Arts or the translation by D. Thompson which
can be had from Dover if you want to go period.  It will have some wonderful
hints on painting, style, types, pigments - which you can read and then make
your own modern choices for what you need.   They're are not expensive (under
$10.00) and can be had on line or ordered from B&N.
Your can also check the the TI editions on limning and there may also be one
on tryptich or religious iconography.
