Someone else pointed to the CoA Glossary of Terms.  That also has
a lot of default postures.  The Pic Dic has a lot of information,

The Pic Dic, s.v. Tree, says

    If the tree is "fructed", it is bearing fruit, whose color must be
    specified; the fructing may also be considered artistic license,
    and added to a tree whether blazoned so or not.  In heraldic art,
    the leaves and fruit are drawn much larger than in naturalistic
    art.

The oak they provide, 746, is in fact fructed without mentioning it in
the text.

In summary, I suggest just doing a regular oak (not a gnarled live
oak).  It's the default for trees anyway.  And fruct it or not as you
like: I like fructing, so I'd ask the artist to toss a few honkin' big
acorns on.  (Think of the Acorn that old Black Oak Keep got, but
bigger.)

Steppes, Barony of the, coat of arms.  (I knew it off the top of my
head because I once was the baronial pursuivant and I know that the
arms blazon was over-specific.)  SCA groups are not on the scanned
archive CDs, or I'd have sent it too.

I'm curious about whether the registered emblazon is fructed.
