Buck: male
The old english for male goat is Bucca

Actually, it depends on the breed. There are plenty of breeds of goats
(European varieties too) wherein both genders have horns.

Horned, I'd say. I don't think I've ever seen a non-horned goat in armory,
although I certainly haven't done a huge search.

I think in general, the default for animals in heraldry is 'male' anyway.
